Virgin active has come out with their own recipe using Trout - I have tried it and believe me it simple and easy.
‘May the Sauce be with you’ – Peter Goffe-Wood
400g Basic Pasta Dough
2x85g Smoked Salmon Trout, chopped
1 Fennel bulb, thinly sliced
1 cup Crème fraiche
Bunch Chives, finely chopped
Juice of 1 Lemon
Sea salt and freshly ground black pepper
1. Roll the pasta dough up to the no.6 setting on your machine. Cut into ribbons on the fettuccine setting on your pasta machine. Cook the pasta in a pot of boiling salted water and drain.
2. Sweat the fennel in a little olive oil until soft and translucent.
3. Melt the crème fraiche in a little pan, add the rest of the ingredients, heating it just through and toss with the cooked fettuccine.
4. Sprinkle with the chopped chives and serve immediately.
