There is much excitement in Cape Town as we head towards the World Cup Soccer Finals.

There is a major buzz in the air and now we seeing all the fabulous changes to our city. Looks like we right on time, the stadium is built, roads have been made larger, plants are growing and making this city look even more beautiful. We are ready to host this momentous occasion.

2010 is here!!

We have been looking forward to this year and the count down can be heard on every ones lips.

Delicious Summer Salmon- Smoked Salmon With Avocado Salad And Beetroot Cream

I picked up this recipe online and is very very tasty and oh so very easy to make!!

Always a winner with me!

Smoked Salmon With Avocado Salad And Beetroot Cream

Ingredients

  • 8 slices smoked salmon or salmon trout
  • 2 ripe avocados, peeled and stoned
  • 1 apple, cored
  • 3 tomatoes, halved and seeded
  • 5 ml lemon juice
  • 2 spring onions, sliced
  • 1 green pepper
  • 250 ml good-quality mayonnaise
  • 25 ml pickled beetroot
  • 5 ml chopped fresh dill for taste

1. Cut the avocados, apple and tomatoes into small cubes and place in a glass bowl. Drizzle with the lemon juice. Carefully mix in the spring onions and the green pepper.

2. Blend the mayonnaise and the beetroot in a food processor until smooth.

3. Just before serving, lay a slice of salmon in the middle of each plate. Spoon a small portion of salad into the centre of each slice of salmon. Drizzle with the beetroot dressing. Season with salt and freshly ground black pepper and top with dill. Serve immediately.

The Best Salmon & Tuna Burger Patties in Cape Town

Yesterday was a perfect summers day in Cape Town and could not wait to get down to the beach with a few friends!

Amazing feeling to dive into the icey waters and come out totally refreshed!

Having something healthy and nutricious for lunch was the obvious thing to do – so we tried out the new CNCProducts Salmon & Tuna Burger Patties. Here is a quick and easy recipe.

I prefer to always braai or grill patties as its much healthier and keeps in the nutrients.

4 Salmon and Tuna Burger patties

Lettuce

Tamato,

sliced onion

Pickles

Squeeze of lemon juice

Add all ingrediants onto the bread rolls and enjoy with ice-cold drink

Christmas is around the corner and although I know this recipe is a little pre- emptive, cant help getting excited about the fresh smell of mixed spices and sweet fruits wafting through the house!

This Christmas cake is absolutly delicious and very easy to make. I found the Christmas recipe in an old cook book that has been passed down from generation to generation and now to you.

Christmas Fruit Cake recipe

750 gms CNC Products Mixed Fruit
250 gms CNC Products Cherries
125 gms CNC Products Dates
125 gms CNC Products Walnuts

Walnuts
250 gms Butter
1.5 Cups Sugar
1 Cup Water
1.5 tsp Bi-Carb
1/4 tsp Salt

Boil together fruit, dates ,butter, sugar and bi-carb for 15 minutes
Cool then add 2 tots Brandy, 3 well beaten eggs, cherries and walnuts.

Add 3 cups flour, 2 tsp baking powder and 2 tsp mixed spice.
Bake at 150 degrees C for 1 hour then reduce to 120 degrees Celcius for a further 2 hours.
